Starting in iOS 14, it is possible to capture stereo audio using the built-in microphone, as outlined here:

I would like to be able to configure audio sessions to leverage this during a recording, such that the audio is in true stereo (as opposed to 2-channel, but essentially mono). Many native recording apps, including Apple's Voice Memos, already support such a mode.
